Today's food is Kale
Kale or Borecole is a form of cabbage (Brassica oleracea Acephala Group), green in color, in which the central leaves do not form a head. It is considered to be closer to wild cabbage than most domesticated forms. The species Brassica oleracea contains a wide array of vegetables, including broccoli, cauliflower, and Brussels sprouts. The Cultivar Group Acephala also includes spring greens and collard greens, which are extremely similar genetically.
kale was one of the most common green vegetables in all of Europe. Curly leaved varieties of cabbage already existed along with flat leafed varieties in Greece, in the fourth century BC. These forms, which were referred to by the Romans as Sabellian kale, are considered to be the ancestors of modern kales. Today, one may differentiate between varieties according to the low, intermediate or high length of the stem, with varying leaf types. The leaf colours range from light green through green, dark green and violet-green to violet-brown. Russian kale was introduced into Canada (and then into the U.S.) by Russian traders in the 19th century.
During World War II, the cultivation of Kale in the U.K. was encouraged by the Dig for Victory campaign. The vegetable was easy to grow and provided important nutrients to supplement those missing from an ordinary normal diet because of rationing[2].
Kai-lan, a separate cultivar of Brassica oleracea much used in Chinese cuisine, is somewhat similar to kale in appearance and is occasionally called "kale" in English.
Kale is considered to be one of the most highly nutritious vegetables, with powerful antioxidant properties and is anti-inflammatory.[1]
Kale is very high in beta carotene, vitamin K, vitamin A, vitamin C, lutein and zeaxanthin and reasonably rich in calcium.
Roasted Kale with Sea Salt
- 4 cups firmly-packed kale
- 1 Tbsp. extra virgin olive oil
- 1 tsp. good-quality sea salt, such as Maldon or Cyprus Flake
Preheat oven to 375 degrees F. Wash and trim the kale: Peel off the tough stems by folding the kale leaves in half like a book and stripping the stems off. Toss with extra virgin olive oil. Roast for five minutes. Turn kale over. Roast another 7 to 10 minutes until kale turns brown and becomes paper thin and brittle. Remove from oven and sprinkle with sea salt. Serve immediately.
Makes 2 servings.

Kale and chocolate smoothie
What exactly is a green smoothie? It's a fruit smoothie that includes a big serving of dark green leafy vegetables.
Green smoothies are an excellent breakfast choice for many, as they provide healthy carbohydrates, along with an abundance of vitamins, minerals, phytochemicals, and chlorophyll. Green smothies are also an excellent source of fiber.
When making green smoothies, it is best to use slightly more vegetables than fruits. In general, we strive to make our green smothies 60 percent greens and 40 percent fruits.
Our favourite greens to use in green smoothies are romaine lettuce, kale, spinach, and Swiss chard.
Our favourite fruits to use in green smothies are bananas, pears, apples, blueberries, mangos, papayas, and pineapples.
If you don't have any problems digesting fruits and vegetables, you can mix and match any combination of the vegetables and fruits listed above. If you have a sensitive digestive tract, it is best to combine only one vegetable and one fruit at a time.

Put green vegetables, fruits and 1 cup
For extra antioxidant power, we like to add 1-2 teaspoons of acerola cherry powder and 1-2 teaspoons of Dr. Ben Kim's Greens to our green smoothies.
